have had dairy and eggs. Well, I should clarify
that I may have had muffins or other baked goods at the homes of friends… here
and there and I am sure those ingredients were in there ( I don’t want my food
convictions to break fellowship with people-lesson learned that from a friend). Anyhow, I gave up my beloved nonfat mistos
and my occasional egg breakfasts. I have
just read too much this year… seen a few more documentaries… etc. that has
enabled me to move onto a different, vegan (?) journey. <o:p></o:p></span></div>

<span style="font-family: 'Trebuchet MS', sans-serif;">My goal is to eat and provide in my household a “strict”, whole food, plant-based diet. Though, in regards to the holidays, I always told myself that I would have meat at
Thanksgiving and Christmas dinners.
Well, as those holidays were coming upon us, I wasn’t sure if I could
eat the turkey… oh, this has caused me sooo much turmoil! I LOVE Thanksgiving and Christmas (I start
listening to Christmas music in October—sad, I know…). Having these holiday dinners without turkey just
seemed so untraditional! “… But, I just
can’t do it… but it is not the same without it… but I can’t…” this is what was going
on in my head for a few weeks! So with
all this inner dialogue and conflict, I decided that having the turkey was OK,
especially since it was causing unnecessary stress. I mean, it is just this one time (and maybe
Christmas). I was planning a trip out of
town just so I didn’t have to think about making a meal—ridiculous.<o:p></o:p></span></div>

was out of the question. I had friends checking in Northern VA for me… our Kroger’s,
local health grocery stores were out.
Ironic…haha. That day I was checking my email and came across a <i>Forks Over Knives</i> (documentary
sensation) newsletter update with a Vegan Thanksgiving Menu. I quickly viewed it over on my phone as I was
shopping in Kroger. I bought the
ingredients I didn’t have and went home.<o:p></o:p></span></div>

The first 5 recipes are from <i>Forks Over Knives</i>. I tweaked the recipes here and there… the
originals have been cited with their website.
The last recipe is from the food editor and show, <i>Ask Aida</i>—I got the Pecan Pumpkin No Crust Pie recipe (mine with
walnuts) a few years ago and had changed a few things as well. I have made this no crust pie many, many
times, and it just keeps getting better and better. My little Brinley loves it… it is dairy free,
but it still has eggs (free-range, organic of course!).<o:p></o:p></span></div>

water. Place in oven and bake for 30 minutes. When done, remove from oven,

pot, sauté onions, carrots, and celery in [1/4] cup water or vegetable broth
until slightly browned, approximately 5 minutes. Add wild rice, brown rice,
mushrooms, poultry seasoning, sage, black pepper, and remaining water or
vegetable broth. Bring to a boil on medium-high heat and then simmer on
medium-low heat for 30-40 minutes or until all liquid is absorbed. Remove from
heat.<o:p></o:p></span></div>

mixture into each squash. Cover in foil and return to oven. Bake for 30-35 additional

Drop by rounded tablespoons an inch apart on the prepared baking sheets, making about 24 cookies. Press down on each cookie with the back of a fork to flatten slightly. Make into a ball--you can either roll this out onto a floured surface or just leave in the bowl (which is what I do since it saves on time). You can use a biscuit cutter if you rolled this out onto a surface. I just use my hands and pat about 1/4 cups worth or so into a round-looking discs and place each onto my stone baking sheet. I like to put a piece of foil to cover them to help keep them moist while they are cooking--but this is optional. Bake for about 10-15 minutes (longer if you lay the foil on top-unsealed). It finally dawned on me... we had been listening to Christmas music for a little over a week and now we were reading Christmas books. Last night Brinley wanted to read some stories about the birth of Christ. We read two books and in both, there were illustrations of angels. He was so attracted to these angels. "Mommy, can you sing me a song about aaaaaaannngels?"(He says this with a smile that is so cute!) So, when tucking him in to sleep, we sang "Hark the Herald Angels Sing" and O Come all Ye Faithful".<br />

Anyhow, Brinley and I like to sing songs right before bedtime--"Twinkle Little Star" and other songs (mostly made up)... we were in mid-song when we were interrupted by the loud sounds of the fireworks going off. We opened the blinds and watched them. First--it was such a "melting my heart" moment watching him smile as the fireworks light flickered on his face in the dark. Anyway, after watching such a sensational eruption of noise (the babies were sleeping), I tucked him in and he just kept asking, where the fireworks went. "Mommy, where are the fireworks?" (me: blah, blah, blah) "What are they doing?" (me: blah, blah, blah). He then exclaims, "I am going to eat fireworks!". I laugh and say, "Are you going to sprinkle them with salt?" He giggles and excited, he yells, "With ketchup, and dip, and hummy (hummus) with carrots, too!"</span><br />

1/2 cup water<br />
2-3 tbps of pickling spices<br />
2 cucumbers, quartered lengthwise or diced-coined size<br />

In a medium saucier, bring vinegar and water to a boil and then remove from heat. In a mason jar (1 qrt or so), fill with the pickling spices and cut cucumbers and pour the hot brine over the pickles. At this point you can seal it with a lid and and refrigerate for at least 24 hours or up to a few weeks OR I cover it with a cheesecloth and rubber band and let it sit on my counter to ferment for about 24 hours and then I refrigereate it with the lid--though, you can let it sit on your counter for up to 3 days.<br />

The pickles need air to ferment, that is why I use a cheesecloth. Pickles are so good for your body as they aid in digestion.* (The Kind Life)<br />

You can cook the steel cut oats, but they take longer, or you could just used rolled oats with the same measurements. Since we do use dry beans and beans are our main source for protein/iron, it is nice to have something to grab out of the fridge. I also like to have whole grains everyday (not just oats). Some grains take a longer time to cook... etc...so it is nice to have things "on the go". We are all busy around here, and especially at dinner time, my twins like to sing loud :) and Brinley likes to run around the house like crazy... it is a little chaotic, needless to say.</span><br />

This week our meals have quinoa and garbanzo beans (AKA chickpeas). Last week we had meals with lentils and brown rice. My husband isn't a big fan of garbanzo beans, so I usually mash them into whatever I am making. He loves this Italian Quinoa recipe I have (he likes tomato-based foods like pasta...etc), so I usually just mash the chickpeas into the sauce which make for a creamier consistency.</span><br />

I am not really “unsettled”, but there are days when my husband and son do not like my food—LOL! My son was born eating my food so it is easier for him to catch on, but he is going through a stage where he doesn’t want to eat and would rather play, color, test limits… etc. My husband grew up eating “mock chicken” and white bread… so he has had a long road and I have to remember that! His mother tried with him too, but he was born with junk food blood! :) Though, I must add how proud I am of him—when he does slip up and eat something he shouldn’t, he comes to the conclusion on his own how gross the food item is and is shocked by how he used to eat certain things like that. Anyhow, back to my point…. I would like to clarify that I am not an expert in the area of health foods and whole food living, so any advice and/or suggestions you get from my blog or in FB message, please know that I am on this same journey as you! I prayed this morning that the LORD would humble me in that area! I may blog about how sugar is horrible for you—it is, but I do have slip ups… oh, how dangerous it is for me! I really hadn’t had much sugar in years and after having been pregnant and now with kids… I have this sweets-sugar thing I cannot break. My husband already has this love affair with sweets, so it is so easy for me to slip up when he is indulging! After I had the twins, I decided “no sweets” and at Halloween this past fall, we had a little party—Jord took Brinley trick-or-treating to a few houses on our street. We were just going to give away the candy Brinley received to Jord's staff, but Jord decided to indulge in a few pieces of candy. I saw what he was eating and looked in the bag to see what else was in there. I have this major love for peanut butter (I don’t think you understand how much :)) and in my earlier days a Reese’s’ Peanut Buttercup or Butterfinger were my refuge…ha-ha… well those were in there. I proceeded to eat all of those and then some more… I felt so disgusting—with a sugar high, headache—the ingredients were awful with color dyes and modified cornstarch…etc. What was I thinking? You know what… I preceded that habit up until Christmas, but instead of getting those chocolates, I would buy organic chocolates to meet that craving… and you know what has resulted? (First of all organic chocolates do have sugar, maybe unrefined evaporated cane sugar, but in the amounts I was eating… not good! ) My immune system was shocked and I got a horrible cold that turned into a sinus infection, laryngitis, bronchitis…etc –this all lasted over 3 weeks! I haven’t had a cold in 2-3 years and even then they lasted no more than 3-4 days. I finally begged the LORD for self-control and thanked HIM for a wake-up call. My husband was even surprised by my hypocrisy and was actually telling me those nights I would overindulge, to “take it easy” (and I would hate him for it!). Well, with the LORD’s strength, I have been able to get out of it for now. <o:p></o:p></span></div><div class="MsoNormal" style="line-height: normal; margin-bottom: .0001pt; margin-bottom: 0in;"><span class="Apple-style-span" style="color: #bf9000; font-family: 'Trebuchet MS', sans-serif;"><br />

My husband will eat meat outside of the home, but will avoid beef… same goes for Brinley, and well, the twins just stick to breastfed milk :). I avoid meat altogether but will splurge on holidays and only on free-range, organic meats. I will have non-fat organic milk in my coffee and will eat eggs on occasion… but for everything else, like smoothies, oatmeal, soups, baking… etc… we drink Almond/Rice/Coconut milks. Basically, we try to eat at minimum 8 servings of produce a day and balance out everything else. We also like to incorporate healthy fats into most meals. Our meal plans were very much inspired by Cynthia Sass (a writer/nutritionist). Throw in the chopped squash. Add a little bit of water and use a wooden spoon to scrape the caramelized bits from the bottom of the pot (helps in making great flavor). Then fully add the liquids, kale and cilantro. Bring all to a boil and simmer for about 30 minutes. I took a potato masher and mashed into the soup to help in making a creamier/chunkier texture--I didn't mash too much... just about 2 mashes and a swirl :). I wasn't in the mood to make waffles, but I did make whole grain pancakes, scrambled eggs with cottage cheese and curry, and vegetarian sausage. I used my waffle recipe (previous post) and instead used ground oats, just used 2 tsps of turbinado and added an extra tsp of baking powder. </span><br />

I aim to buy all organic foods-- we all know this can expensive. My oldest, Brinley is just 2 1/2 years old and loves to snack. I was buying organic granola bars, whole grain bars...etc. Those alone can get expensive! In an effort to tackle the budget issue, I have been on the prowl to make these kinds of snacks from scratch. He loves my Brown Rice Krisp Bars (recipe in this blog somewhere). This morning, while making my coffee and preparing the pancakes, I baked the "Baked Oatmeal with Chocolate Chips) that I had started about 12-15 hours ago. This recipe was inspired by a "Keeper of the Home" recipe, but I made a few changes. According to KOFTH, soaked oatmeal is high in phytates- which impairs digestion. This can cause a block in mineral absorption. KOFTH recommends 12-24 hours of soaking for better digestion.
